Cooking with Kor: Intuitive Guac

One of my favourite skills to continue to nurture in the kitchen is the idea of intuitive cooking. Susan and I have spent many afternoons in the kitchen creating delicious things and she taught me to focus less on the recipe and more on how it tasted, what was in the fridge we could make use of and in so many ways in and outside of the kitchen -  to learn to trust my gut.

This Not So Traditional Guac is an example of that, using what I had to make a tasty and nutrient dense snack.

Ingredients:

  • 1-2 Avocados
  • 1-2 Roma tomatoes (these happen to be out of moms garden :) 
  • Finely diced red onion (approx ¼ cup)
  • ½ clove of garlic, diced
  • Lime juice (½ - 1 whole lime depending on favour preference)
  • 1 ½ TBS Sriracha Sea Spice, less if you prefer less spice
  • Sea salt - to taste

In medium sized bowl coarsely chop & mash avocados. Add all ingredients above and combine. 

Today's recipe ended up being avocado light (because one had seen better days once I cut into it) and tomato heavy. I also forgot to buy tortilla chips so we ate it with my favourite crackers - Eve’s Crackers, Savoury Sunflower.
